If you want to make pizza at home, you will need to go through this 5 step process:
1) Ingredients selection
You will need fresh ingredients and well kept, with the following characteristics:
- the water must be “potable”, with not too much lime
- the baking powder must be fresh and dry, and must be bought when you want to bake a pizza. Don’t buy baking powder if you are not going to use it promptly.
2) The recipe
For a good pizza you will need:
- 1 litre of water
- 2kg of flour
- 20g of fresh baking powder
- 50g of salt
3) Pizza baking
Split the flour in two recipients. Put salt in one, and baking powder in the other one. Mix, keeping the two mixtures separated until they are not become two consistent “composti”, so merge them and finish kneading only when the dough will be smooth and wet.
Now you can proceed with the dough cutting in order to form dough of the wanted weight and measure. Before proceeding with leavening, keep the dough in your fridge for 5 hours
4) Leavening
You should keep the dough at a constant temperature of 23°C for 3 hours approximately. Then you will lie them in the pan pressing the dough with your fingers to obtain an homogeneous stratus at which you will just need to add some olive oil.
Now put the tomato sauce, and let the dough stay for 1 hour before proceeding to the baking.
5) Baking
It is the last operation but the most important part, since this will be crucial for your product’s quality. Put the pizza in oven at 250°C for 12-15 minutes.
